This glorious, golden beast is sometimes referred to as a German pancake. One of my fondest childhood memories was racing my dad down the stairs to make this together. If you want a fast, impressive breakfast, this is the way to go! Plus, you can top it with anything you would eat on a pancake. Real maple syrup or homemade freezer jam are among my favorites.

Place a cast iron pan in the oven and preheat to 470 degrees.

6 large eggs
1 cup milk
1 cup flour
1 tsp vanilla

Wisk ingredients to combine. If you get clumps from the flour, relax. They will eventually get beaten down.

1/4 cup butter (half a stick)

Carefully remove the pan from the oven and place on a heat-safe surface, like the stove. Put the butter in the pan and wait for it to melt completely and spread all over the pan. Then, pour your batter into the middle of the pan and it will push the melted butter to the edges. It might look kind of strange, but it's fine.

Bake for 11 minutes. When it's done, you will find that it has risen a crazy amount. Serve immediately because it will start to deflate as soon as you remove it from the oven.

Top with syrup, Nutella, jam, or anything else and enjoy!
